Chow Mein Bird’s Nest Recipe

Mini Bird's Nest RecipeIt wasn’t until I was in college that I discovered these yummy springtime treats! One of my roommates’ mom made us a whole batch for Easter.

I love chocolate and I love chow mein noodles, so these quickly became one of my favorite treats. And not to mention they are super easy to make!

All you need is one bag of each ingredient – chocolate chips, butterscotch chips, chow mein noodles, and M&Ms.

Pour the chocolate chips and butterscotch chips into a microwave safe bowl to melt. I have learned the importance of melting chocolate slowly, as I have burned quite a few bowls in the past and burnt chocolate is not the best of smells. So at 50% power, I heat up the chocolate at 45 second intervals, stirring between each, until it is melted.

Next dump the whole bag of chow mein noodles into the bowl and mix throughly.

Usually I shape the nests on wax paper, but this time I decided to try making them in cupcake pans. Because if you saw the way I make my cake bites, you would know I am a messy baker. I thought it would be fun to make bite size bird nests in a mini cupcake pan.

Grease the pans generously – I sprayed a few layers of PAM baking spray to make the nests easier to remove once they hardened. After putting a spoonful of chow mein noodles into each cup, I added peanut M&Ms to each nest. And I also made some regular sized ones because sometimes the minis just won’t suffice!

I put the trays into the fridge for about 10 minutes to set the chocolate. Then using a spoon, I popped each nest out of the pan.
