One of the first things I made from Pinterest was this No-Bake Energy Bites recipe from Smashed Peas and Carrots. Two summers ago, Ryan and I were heading up north to stay at the cabin for a week with his parents. Since we spend most of the day fishing, golfing, and relaxing outside, I thought these would be perfect to bring along on the trip!

Made with yummy goodness – oatmeal, peanut butter, chocolate chips, and coconut – I knew I would love these, and who am I kidding, anything with “no-bake” in the title…sign me up!

It’s a super quick and super easy recipe – I had almost everything on hand, so I whipped these up the other day during nap time. Delicious!
