Fall dinner recipes are my favorite to make, there’s just something about warm, comfort food on a crisp, fall night! I’m all about meals that can go from the fridge to the table in as little time as possible with leftovers for lunch the next day.
Having gone to college in Minnesota, hot dishes were a staple on our dinner menu. When I first heard the term “hot dish” from one of my roommates, I had no idea what they were talking about. I learned that it’s pretty much what most people call a casserole – some sort of meat, veggies, and a starch all thrown together and baked to perfection.
And I also learned the importance of including tater tots in hot dishes. My favorite is sloppy joe tater tot hot dish in which a can of MANWICH is one of the main ingredients. Topped with melted cheese, this recipe is definitely a fall favorite in our house!
Ingredients
1 lb ground turkey (you can also use ground beef)
1 lb bag mixed veggies – I used a bag with mixed peppers, onions, & corn
1 can MANWICH Sloppy Joe Sauce
2 oz cream cheese
8 oz shredded cheddar cheese
16 oz frozen tater tots
Directions
Preheat oven to 450 degrees. Brown the ground turkey in a large skillet. After it’s throughly cooked, I like to use a potato masher to break up the larger pieces. My husband actually taught me this trick when we make regular sloppy joes.
With the heat on low, stir in the frozen veggies, MANWICH sloppy joe sauce, and cream cheese. Cook until the cream cheese is melted, stirring occasionally.
Pour the mixture into a 9×13 baking dish. Top the mixture with half of the shredded cheese. Arrange the tater tots on top of the cheese in a single layer, top with the rest of the cheese.
Pop it in the oven to bake for 20 minutes, remove from oven, and serve.
One thing I like about this dish is you can make the mixture earlier in the day, keep it in the fridge and then add the cheese and tater tots just before it’s time to bake it. This is something I do a lot because trying to cook dinner for something that should take about 40 minutes just doesn’t happen with a toddler running around… It ends up being about an hour and a half to get dinner on the table with a trail of shredded cheese around the house from a certain little toddler.
This sloppy joe tater tot hot dish also makes for amazing leftovers the next day. There’s something about certain dishes sit overnight to let the flavors all soak together.
