I’ve always been a huge fan of carrot cake, especially when it’s topped with yummy cream cheese frosting! I do love to eat carrot cake any time of the year, however we usually have it as an Easter dessert. But after making these cupcakes, I think it might be making an appearance more often on the dessert menu!
These cupcakes were much easier to make than I expected, especially because I’m more of a box mix kind of baker. But I’m branching out these days and trying my hand at simple made-from-scratch baking recipes.
